Tuna Melt Sandwiches

I have a recipe hand down from my mother. Every weekend she would make this for lunch.
I would like to share with my frugal friends:
1 6-oz can tuna with water
1/2 Tbls. mayonnaise
1 tsp diced onion
Add celery if you like.
Kraft cheese singles
English muffins
Stir ingredients in small bowl. Top on English muffins and add 1 slice of cheese.
Place under broiler just until cheese melt.
Serve hot and enjoy!
Stir ingredients together in a small mixing bowl.

Gamy Hamburger

For meat that is from Sam's Club that is sold the day it is sell by date. I freeze it right away, then when I need it. It is usually gamy, so I make hamburger out of it. I would not suggest using it in hotdishes tho. Buy hamburger in bulk at regular grocery stores, so the hamburgers don't taste gamy. These tend to be on sale during Superbowl time, and football season. The sell by date isn't on the same day you buy it like at Sam's Club. Well let's discuss what I put in Chili tomorrow for my family.

Price of Meat

Ever consider if the meat you purchase at your local grocery store is really on sale, or was it overpriced in the first place and dropped just above national averages?? Or have you ever been curious about meat price trends?? This also includes: Eggs and Dairy
The USDA puts out a monthly retail meat price spread on the following website:
www.ers.usda.gov/Data/MeatPriceSpreads/
look under DATA: Retail Prices
If the prices are below the average then you know that you have found a good deal
Print this out and compare the sales prices on the grocery sales ads. And/or take it with you on your next shopping trip.
example:
Albertsons this week has a sale price of $1.79LBS on Ground lean Beef (80% fat free) the national average is $3.45(august2009) that's a $1.66 savings or 48% savings-their ad says that it's a savings of $1.21LB-which would be $2.99LB which is good. But their Boneless Sirloin Steak is on sale for $3.99 and the national average is $5.00 which is a $1.01 savings-20% savings-but on the sales ad it says that their normal cost is $8.99LB-sounds pretty high huh?. So obviously Ground beef is a great choice and well, if you want steak you are saving some-but not alott.

Ohhhh the cheapest thing I did this week!

Oh I did the ultimate cheapskate move and I'm kind of embarassed - lol. I have been unemployed here in the Great State of Michigan since June so not that embarassed!
I needed parmsaen cheese for a recipe but only a 1/4 of cup. I was driving by a combination Taco Bell/Pizza Hut and quickly went into their empty drive thru. I got up to the window and said that my husband and son had recently went through and didn't get their parmasean cheese packets for their breadsticks and that they called me and asked me to get it on the way home.
The bad thing is, I don't have a husband or a son! They were very gracious at Taco Bell/Pizza Hut and gave me six packages and I had my 1/4 of a cup of parmesan cheese. I did base my whining husband part on my ex-husband. I do go that Taco Bell a lot so I don't feel too bad!
On the upside, I made this delicious pizza
Today I made a delicious pizza pie.
1 roll of phyllo dough
1 cup mozzarella cheese
1 sliced red onion
3 thinly sliced Roma tomatoes
Melted margarine
Parmesan cheese
Thaw the phyllo dough per package directions.
Layer one piece of the dough, brush on some butter and the parmesan cheese, repeat layers for 20 sheets. I buttered every other layer of the dough.
Sprinkle crust with mozzarella cheese and then a layer of the onion and then a layer of the tomatoes, sprinkle with salt and pepper.
Bake at 375 degrees for 20 to 25 minutes or until cheese is melted and the dough is golden brown on the edges.

sugar free peach pie

I MADE THAT PEACH PIE TODAY IT TURNED OUT NICE AND I LIKED IT COULDNT REALLY TELL THAT IT HAD NO SUGAR OR SALT..I CUT UP THE PEACHES SOME VERY RIPE ONES MIXED IN WITH A FEW NOT SO RIPE AND ADDED SOME CINNAMIN AND NUTMEG TO TASTE AND PUT THEM IN A PIE SHELL AND ADDED A COUPLE OF TEASPOONS OF BUTTER AND PUT A CRUST ON TOP AND BAKED FOR 40 MINUTES ON 350 DEGREES..I ADDED SOME SUGAR FREE COOL WHIP AFTER I TOOK IT OUT OF THE OVEN AND GAVE SOME TO MY TASTE TESTER AND HE SAID IT WAS THE BEST PEACH PIE HE EVER HAD IT IS NICE TO ENJOY PIE ONCE IN AWHILE..I THOUGHT FOR SURE I WOULD HAVE TO GIVE UP SWEETS TOTALLY WHEN I WAS DIAGNOSED WITH DIABETES 6 MONTHS AGO..I HAVE ALWAYS BEEN A BIG SWEET EATER AND I GUESS YEARS OF EATING SWEETS HAVE CAUGHT UP WITH ME BUT I ALWAYS NEW ONE DAY I WOULD PROPABLY BE DIABETIC AS BOTH MY PARENTS WERE DIAGNOSED AT YOUNG AGES WITH DIABETES...I AM GLAD THAT I HAVE BEEN EXPERIMENTING WITH COOKING AND RECIPES..THERE IS NOT MUCH OUT THERE FOR DIABETICS AND IF YOU TRY TO BUY SUGAR FREE ITEMS AT THE STORE MOST OFTEN YOU HAVE TO PAY TWICE THE COST..
BEEN PACKING MOST OF THE EVENING FOR GOING UP NORTH HAVE A BRIDAL SHOWER TO GO TO FOR A FAMILY FRIEND..BEEN LOOKING FORWARD TO GETTING AWAY FOR A FEW DAYS..THE AREA WE GO TO IS NICE AND I LOVE LOOKING AT THE YARD SALES AND CRAFT SHOWS AND AREA FLEA MARKETS AND I LOVE LOOKING IN THE TRASH UP THERE TO HAVE FOUND ALOT OF NICE ITEMS IN THE TRASH..LAST WEEKEND I FOUND A NICE BIKE IN THE TRASH JUST NEEDED THE TIRES TO BE FILLED WITH AIR AND THE CHAIN NEEDED TO BE OILED USED SOME OLD COOKING OIL FOR THAT JOB..WHEN THE COOKING OIL GETS OLD AND NOT SUITABLE FOR COOKING IT IS GOOD FOR OIL TO MAINTAIN CARS AND CHAINS ON BIKES AND SQUEAKY DOORS..COOKING OIL IS A GOOD FOR THAT TYPE OF STUFF..BEEN GETTING SOME FREE COFFEE SAMPLES FROM MARLBORO.COM I AM NOT SURE IF I SPELLED THAT RIGHT BUT IF YOU TYPE IN FOR THEIR WEBSITE AND REGISTER YOU CAN GET A FREE SAMPLE OF THEIR COFFEE THAT THEY ARE GIVING AWAY IT IS A NICE COFFEE HAS A GOOD FLAVOR HAVE RECEIVED SEVERAL FREE AND SENT SOME TO FRIENDS WHO HAVE GIVEN IT TO ME..BEEN EXPERIMENTING WITH COFFEE GROUNDS IF YOU EMPTY THEM ON A PAER TOWEL AFTER YOU HAVE MADE A CUP OF COFFEE AND LET THEM DRY OUT YOU CAN REUSE THEM FOR 2 MORE CUPS AND THAT IS ON A SPOONFUL OF COFFEE..I HAVE ONE OF THOSE ONE CUP COFFEE MAKERS..LIKE IT ALOT PICKED IT UP AT THE THRIFT STORE NEW IN THE BOX FOR A $ 1.00..I LIKE MY COFFEE JUST BEFORE I GO TO BED FOR SOME REASON IT MAKES ME RELAX AND I HAVE A GOOD NIGHTS SLEEP..YOU WOULD THINK THE CAFFINE WOULD KEEP ME AWAKE BUT IT DOESNT..I PUT SOME COCUNUT OIL IN MY CUPPOARD AND THE HOT WEATHER MELTED IT INTO LIQUID FORM I AM GOING TO ADD IT TO SOME CHEAP LOTION THAT I HAVE PICKED UP AT YARD SALES..I ADD OTHER INGREDIENTS TO CHEAP LOTION AND MAKE NICE MOISTURIZING CREMES LIKE THEY SELL IN HIGH END DEPARTMENT STORES..YOU CAN ADD ANYTHING TO CHEAP LOTION ALL IT IS LOTION B ASE LIKE YOU GET AT THE CRAFT STORE YOU CAN ADD OTHER OILS AND ESSENTIAL OIL AND MAKE IT BETTER AND IT WILL LAST A LONG TIME TO..I LIKE OLD WINE BOTTLES..I FIND THEM IN RECYCLE BINS AND I TAKE THEM HOME AND CLEAN THEM OUT AND THEN I PAINT PRETTY PICTURES ON THEM AND FILL THEM WITH HOMEMADE BUBBLE BATH OR BODY OIL AND GIVE THEM OUT AS GIFTS ALSO HAVE SOLD A FEW TO FRIENDS..I BELIEVE EVERY THING HAS A USE IT JUST TAKES A LITTLE CREATIVITY TO GIVE SOMETHING OLD A NEW LIFE AS SOME OTHER CREATION..

Little Tid Bits

Just a few tips and tricks... To get the last of the sauce out of my spaghetti jar,I spoon the cooked noodles into the jar,swish it around and dump it into bowl. To cut an onion-cut both ends off and slice skin from end to end,downward. To break head of lettuce-slam top on counter or cutting board-pull core out,tear into pieces. Bitter Cucumbers? slice off ends and rub the top in circular motions-do both ends,rinse and slice. To chop garlic,slam top on counter,break a clove off,cut ends off and make slice from top to bottom,longway and peel.

10 cent a box vermicelli

I am lucky to have my oldest working at walmart...as far as finding good deals. She looks daily for stuff to add to our food stockpile, I know of several walmarts who have the food markdown cart way back in the back by the dairy sections for those who don't know about it. Well the other night she called and the smaller reg. $2.59 each crystal light pink lemonade canisters marked down to $1.00 I did not have coupons, but hubby loves this stuff so I told her to buy all 15 of them, Unfortunately in the few minutes it took her to call me, people bought all but 3 lol but I got 3 of them. Also they had vermicelli boxes for 10 cents each!!!!!!!!!!!! She was able to get me 55 boxes, 55 boxes of vermicelli for $5.50, What a great addition to the stockpile. And these are just noodles, I can use these for spaghetti, buttered noodles, chicken noodle soup etc. Plus I have found that there are great recipes online for using it. This is probably the best excuse to save a little money back each paycheck for these "sales" or loss leader sales from your supermarket. I will take pics of my stockpile and the vermicelli boxes as soon as I get the chance.
I also wanted to pass along that I read earlier today on a few other sites, that the price of sugar is expected to soar in the next month or so. Time to start adding sugar, honey, molases etc to stockpiles at the prices currently. I had noticed that this passed two weeks many grocers had sugar cheap cheap lol wonder what they know haha.
Also walmart will begin marking their summer stuff way way down around $1.00 each piece for clothing and shoes, so keep watch for this stuff. I know I will, With six kids you better beat me there!!!!

USE ALL THAT CHICKEN

For people trying to get the most out of a chicken:
First check ads for oven stuffer chicken roasters, lots of times you can find a buy one get one sale (put one in the freezer)
salt and pepper inside and out. cut an oinon in about four peices, carrot cut in half, stalk of celery in half. put inside. If you have dried or fresh herbs, use them. Don't forget the garlic. Now roast. (This is very important, rise out the roasting pan, get it all and add to the stock pot.)
when done, take all the meat you can off the bone .This is meat for dinner, with leftover for chicken salad for lunch.
Take all the bones, skin, everything inside the chicken , veg. herbs, put in a lg. pot, cover with water, about 2 inches over. Don't add salt . Don't forget the roasting pan juices. Put on the back burner and boil for an hour or so. Now you have stock.
I have to go now , time for me to start my dinner. I will continue later

Cream of Celery Supplement

I got 4 large packs of celery in my Angelfoodministries.com boxes this month. I thought I could never eat all the celery before it goes bad... so, I found a great recipe for cream of celery soup. Then I chopped the celery into bite sized pieces and boiled it in salted water along with the amount of onions called for in the recipe for the amount of celery I had. I froze the celery and onions. Now all I have to do when I need some cream of celery soup for a recipe is take it out of the freezer, pop it in the microwave to thaw it, add the milk that the recipe calls for and add this to what ever dish I am making.

Breadmaker's Tips

If you use a breadmaking machine as I do, here are a few tips that help me. Firstly, once a week I measure out my dry ingredients in large recycled (coffee) jars so I have enough bread mixes to last me a week. (It saves me having to measure out the ingredients every day and cover myself in flour!) I measure out a cup of flour with my measuring 'spoon'.
Now here's a great little tip, use the bottom end of a 2 litre empty lemonade/cola bottle to pour the contents in the jar. Cut a washed and dried empty plastic bottle about 4 inches from the bottom with a pair of scissors. Now use this as your scoop. Put a cup of flour inside the scoop then gently squeeze it so the flour just slides into the jar.
My bread requires 2 cups of flour but only put a cup of flour in at a time. Now when each of your jars has the flour inside measure out the rest of your ingredients. For my wholemeal loaves; that is 2 x tablespoons of sugar, 2 x tablespoons of dried milk powder and 1 teaspoon of salt. Always put the teaspoon of dried yeast in lastly.
For extra vitamins in your bread, I add either poppy seeds or dry-fried sesame seeds I had prepared earlier and put a teaspoon of either or both in the flour mixes. I have also added onion powders for my cheesy bread or any variations of herbs for delicious herby bread.
Now for the wet ingredients. I add one cup of warm water to the bread machine's baking tin and 2 x tablespoons of oil. When I add the second tablespoon I drop some on my fingers and I smear the sides of the tin with the oil. Makes the bread easier to remove when baked and cooled.
If I want a loaf, now all I do is add the water and oil to the baking tin then drop the contents of one my pre-prepared jars inside, I set the breadmaker then leave it do it's thing! Simple, easy and I'm not covered in flour! I always have good results and my loaves taste divine! That is unless I have forgotten to put the metal paddle inside after washing it, then I get a half cooked half flour dough disaster instead!
