The other day I had seared off some pork roast then slow roasted them for about three four hours. I had one and a half of them left . So last night I chopped them up with mexican squash, green bell peppers and red onions. I had some green salsa that I made from roasted tomatoes , onions , garlic , diced green chilies and a lot of clinatro and orange juice. I let the meat simmer in the mixture and added a little flour to thicken it. Season it to taste with garlic , pepper and a little salt. I served it with warm tortillas. It would be good served with rice or beans with queso fresca.
