mexi mac and cheese

Monday, August 17, 2009

My daughter and I (13) came up with this the other day, All 8 of us loved it. We called it mexi mac and cheese....

Handful of ground beef( I use this only for flavoring, so I just put handfuls in baggies to use)

1 package of taco seasoning

2 boxes mac and cheese

1 can corn

1 cup salsa

handful of tortilla or "dorito" like chips

handful of grated cheese

browned the hamburger, added the taco seasoning (no water)

made the mac and cheese

added the hamburger and mac and cheese, corn and salsa in baking dish, mixed well, topped with chips and then cheese, baked about 20 minutes at 350.

This was soooo easy and really really good, And there are so many add ins you could sub for this, tomatoes, dif. veggies etc. it was really tasty, and a good use for all the .50 cent a box mac and cheese I have stockpiled lol

Homemade Hamburger Helper
Wednesday, August 19, 2009 | By APACHI

Party of 1, It's just me and 2 cats, so like you, trying to stretch the dollar to go far. Even though I live in Canada, my city is called Calgary. Our city has now become to expensive to buy groceries, so sometimes I try to do without or I buy bulk or on sale. You're idea about Walmart is great, as well as our stores for buying food for $1.00 goes a long way. Homemade hamburger helper is basically without the box of ingredients you can find in your home. I have my own noodles, tomato sauce or stewed tomatoes, seasoning that you would normally add like garlic powder, onion powder or you could use salt/pepper. You should buy lean ground hamburger, regular is ok too, but has more fat content to it. You fry the hamburger, drain any fat if there is, wipe pan out and put cooked hamburger back in, then add your already cooked noodles, cheese powder with 1/2 cup of milk, 1 cup of water. Now, I also added to it, 1 cut up zucchini(peeled) mushrooms, can of gravy, you can make your own. It was so much cheaper and I stored it in the freezer, because it made 4 individual containers. I saved depending where you could of bought the box contents anywhere from $1.99 to $3.89.
