Tonight we had broccoli chowder and Irish soda bread. Well, the two younger boys had baked potatoes and bread, but that's nothing new.
I am trying to slash costs around here, and I'm sure most people know, it isn't easy. But tonight was a winner! I'm tired, but glad my family liked the meal I fixed. I will have to try to have more meatless meals.

My kids love to eat at Moe's. The kids' meal is called the Mini Masterpiece. It is cheese quesadilla with chips and salsa.
I always keep 2% mexican cheese and tortillas in the refrigerator. That way I can announce, like tonight when hubby was out of town, "It's Mini Masterpiece Night!" My kids love it! If there is some leftover chicken my son likes that too.

Yes, meat and other animal products can be very expensive. Many people don't realize that there are other options when it comes to protein sources. The Meatless Monday Campaign website (www.meatlessmonday.com) has a ton of information on beans, tofu and other cheaper proteins as well as a huge recipe archive. I work for the campaign and have found the recipe archive very helpful in providing a variety of healthy meatless meals for my family.

Lentil Burritos have been a big hit here! I love lentils, and was looking for a way to introduce the carnivorous DH to them. I found this recipe: http://www.recipezaar.com/217952 and he gobbled them up! I have since experimented with seasonings a bit...but all in all good! I almost never bake them anymore, and the filling is good as sandwiches, or all by itself with a spoon, too.
